Don't forget the dipping sauce! Dumplings, both boiled and steamed, ravioli like or in a bun form, are a major staple of the Chinese diet. Eat them for breakfast or eat them for a snack. Get a bowl of seaweed soup or wonton (huntun) soup to round out the meal. And always, always use the sauce! The table will be laden with dark vinegar and a pot of scary looking chili sauce. Sometimes soy sauce will grace the table. Grab a tiny plate and go to work mixing your own special concoction of vinegar, chili, and soy. If you mess up, no problem! Toss your old mixture on the floor and start fresh. Or grab a new plate and start over. Just never, ever forget the vinegar tinged magic spark that is the individually crafted dumpling dipping sauce!
