Go to Northern Iceland!
I recently spent a long weekend in Iceland - most of which was spent up in the north. I highly recommend it - it's pretty cheap to fly up to Akureyri and from there the volcanic area around Lake Myvatn is not far away. Makes a change from all the crowds around Rekjvaik and the Golden Circle and has plenty of waterfalls and volcanic scenery to see. In summer the lake is apparently full of great bird life.
